03 May, 2020 - Hiding Behind Trees & Great Neighbors

Yesterday, I told you I made a loaf of gluten-free bread that didn't rise right. Well, I figured I would have some toast from the loaf this morning. I was eagerly awaiting it after getting up and getting Elsa fed. I can say I was utterly disappointed. I wish I could of had your expertise with using yeast when I baked it. Apparently, I thought it was a rapid rise yeast, but it was not. I was supposed to 'feed' it first with some warm water and sugar before adding it to the mix. The recipe said just add the yeast into the mix then add the warm water. Obviously it did not work and I had to throw out the loaf. I hate to waste food, but it was too doughy to eat. I remember when I was little that somebody said if you ate things that had raw dough in it you would get worms? I think that was an old wives tale just to get you to not eat unfinished baked goods. What do you think? I just went back and baked some cookies today since I had confidence that I could make that work. They weren't even as good as my peanut butter chocolate chip cookies I made for you...Big sigh...It wasn't a very exciting weekend for preparing things in the kitchen. The cookies, I'd like to report, were very edible :) Whenever I bake cookies, I always take 2 over to my neighbors Rob and Sam. Rob is the cookie guy and we trade fresh, baked cookies back and forth as a friendly, neighborly gesture. Then I will take some to Birgit and Paula. Paula brought me 6 potato buns and a Train Sandwich from the shop when she got home. The potato buns are my absolute favorite for sandwiches and garden burgers. The Train is a baguette with a quality ham, large slab of butter and brie. They are super yummy. I imagine grandpa Arvo used to eat a sandwich like that at lunch when he worked in the gold mines. It's very Scandanavian. I love my neighbors. They're loving and great people. We all look out for each other.
We went for a nice walk before the rain hit this morning. This is a picture of your granddog Elsa just starting to do a full body shake. She is looking at the camera showing off for you and giving you a big smile! I like to take her to Pier Park and play hide and seek with her behind the big trees. She has a fun time looking for me. She likes to run ahead and sniff at things. When she is distracted, I slide behind a big tree trunk and do little whistles to lead her to me. Usually she finds me lickety split. Occasionally, it takes her a minute and then I whistle longer so she will turn back towards me. She likes the game. It makes us both happy.

Tomorrow morning I go for my back adjustment at 10:15. The last one I got really seemed to help my alignment and pain. I still have some weird popping going on when I look down and turn my head. For example, if I put my hair up in a pony tail, the angle I put my head makes my neck pop in three places. Yuck. It's getting much better and I really didn't have as much pain this last week. So, also two thumbs up for feeling better physically!
Dearest, Mama. I love you so very much. Please know I think of you many, many times throughout the day. There are so many things that remind me of you. I feel a bit incomplete when I can't actually see in you in person and give you a proper squeeze and kiss. This too shall pass! I hope to be able to do those things very, very soon.
