01 June, 2020 - Doing Windows & A Hearty Meal
Dear, Mom -
Hi! What a busy day. It was so busy I don't remember all the stuff I did. It was a day off for me, so I was doing house things. Mostly outside. My allergies have been going crazy because all the flowers are blooming, so I have an annoying cough and I keep clearing my throat. Other than that, I am fine.
One of the things I did do was make the Swedish kaddkaka. It turned out really good. I gave a piece to Birgit with some strawberries on it and she really, really liked it. That says a lot. Paula hadn't yet tried hers, so I'm not sure what she thought. She's the one I'm concerned about as she is a trained baker and cook and knows WAY more about Swedish baking than I do. I guess I'll hear tomorrow what she thought of it. Here's what it looks like:

It really is different from anything I've had before. It is called a 'gooey' or 'sticky' cake for a reason. It literally melts in your mouth if you eat it warm. If you put it in the fridge, it has more the consistency of a cold brownie, but still a bit different. I will definitely make it for you sometime. I'll want you to eat it warm, though. I think you will like it better...especially with some vanilla bean ice cream.
Elsa, the sous chef, gave her approval, although she wasn't allowed to have any. Dogs cannot eat chocolate. Really it was the whipped cream she wanted the most. She gets a little bit of that when I put it on my coffee. She knows the sound of the container opening after I have taken it out of the refrigerator. It is like pealing a banana or getting the cheese out of the cheese draw. She can hear it a mile away and runs into the kitchen to get her share. Silly pooch.
One of the chores I did today (which was years overdue) was I cleaned the windows. I mean, I did them a while back, but they were so dirty you'd have never known it. I scrubbed the screens, too, because they were dusty. The glass looks great. I can see what's outside now. Amazing. Who'd a thunk something as easy could yield such great results? It wasn't that easy and now I'm sore. Meh.
What are ya gonna do?
After all that stuff was said and done, I got out the pressure cooker and made some roasted asparagus, potatoes, and carrots sautéed in onions, garlic, and olive oil. I made some nice biscuits with butter. Also, a small bowl of fresh strawberries sliced up. It was a late dinner, but very satisfying. I hadn't eaten since earlier in the day, so I was scarfing it down. I had to physically say out loud, "Slow down!" because I was just eating way too fast. I ended up putting some butter and huckleberry jam on another biscuit for dessert. I'd had enough kaddkaka today, so I'll save the rest of that for tomorrow.
I will make sure to talk to you on Wednesday. Aisha said she would personally use her phone if she couldn't find someone else to do it. She is a very sweet gal, mom. I'm really glad she is there to take care of you :)
I think I will turn in. If I don't, I may need to get some toothpicks to keep my eyelids open.
